Bunashimeji mushrooms grow in bundles with long stems and rounded caps. They have a lovely nutty, slightly buttery flavor. They stay firm and a little crunchy, even when cooked, so they’re a nice option if you want some added texture in a dish. You might commonly see them marketed or listed in recipes as “beech” mushrooms, and they’re also often used as substitutes for oyster or straw mushrooms
